Monday: Community Group
Tuesday: Green Spinach Pesto Linguini (recipe coming soon!)
Wednesday: Sweet Potato Pancakes with Blueberries, Bacon, Orange Julius
Thursday: Crockpot White Chicken Chili
Friday: Date Night ♥
Saturday: Shrimp, Goat Cheese, Caramelized Onion, and Arugula Flatbread
Sunday: Waffles, Yogurt

    You’re so organized, Kristin, I honestly can’t imagine ever putting together a weekly menu! I’m impressed! I make almost every single meal we eat at home but my method is a little more impromptu. Maybe when we have kids I’ll have to menu-plan? Also, do you ever end up with leftovers? I find that one dish often stretches two nights and my husband and I both love leftovers :)

      Morning Kate! I’d just be lost without menu planning! Mainly because I only like to go grocery shopping once a week, and we try to keep to a budget. Another reason I need to plan, is because we simply don’t have much food storage in our home, so it’s impossible for me to keep a “well stocked pantry” (my dream!). Usually our cupboards are pretty bare come Saturday :-) . Heehee! But that’s just our reality now. The process of coming up with the menu is actually quite fun for me: perusing Pinterest, and flipping through my cooking magazines, cookbooks, and food blogs! I also find that I waste far less food (esp. fresh produce) when I buy it with a purpose in mind… Another advantage is peace and direction at dinner time. Because of my busy days (with piano lessons sometimes going into late afternoon, or a fitness class to teach right after dinner, or community group to head to), it’s much less stressful to me to know that I have everything I need on hand to whip up a healthful, balanced, delicious dinner! But that’s just me. I’m a planner :-) . – As to leftovers, yes, sometimes I will intentionally make more just so we do have leftovers, but my husband doesn’t care for the same thing the next day, so straight to the freezer they go. I do love having a freezer full of food I can pull out to reheat quickly for those busy nights! – Shew! I guess I’m into long comment answering this morning ;-) .   2. This is my first time here… I’m drooling over your menu plan! :) I am going to have to say I’m in the same boat as your first commenter (Kate). It’s just hubby and I (empty nesters) and I wing it for dinner most days..sometimes right up to 20 minutes beforehand! lol

    I do love to try new recipes though, so I’ll be perusing your recipes as well! :) Here is a little something I whipped up this morning on a whim…

    Where do you get your recipes from? I know some are talented enough to make things up on the fly, (and perhaps you are) but if you’re looking for new things to try, you should get out foodwishes.com — Chef John is the best and makes everything easy!

      I get my recipes from all over! Magazines, an extensive cookbook collection, inspiration from restaurants, pinterest, etc. Thanks for the recommendation! I always love finding new sources. I’ll have to check Chef John out! Happy Monday!
